Are You Looking for a Way to Use Up All Those Tomatoes and Zucchini?

You’ll love this easy side dish that goes great with any meal.

For a non-gardener, I’ve been blessed with an abundance of fresh tomatoes and zucchini this summer.

I am also a non-canner. Working in the kitchen, chopping veggies, and stirring steaming pots of sauce over a hot stove in the middle of summer is not my thing. I am, however, enjoying the bounty right now.

This recipe for Tomato and Zucchini Medley is so good that even my husband who is not a fan of zucchini liked it.

Ingredients

  • 2 tomatoes, halved and cut into 1/4-inch slices
  • 1 large zucchini, sliced
  • 3 tablespoons salsa
  • 3 tablespoons water
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • Salt and pepper to taste

Note: If you have an extra bell pepper, dice it and add it to the mix before cooking.

Directions

Mix tomatoes, zucchini, salsa, water, oregano, basil, salt, and pepper in a small saucepan. Add a bell pepper if desired. Bring to a boil over medium heat, then reduce to a simmer. Simmer for 3 to 4 minutes, stirring frequently.
