You Can Make German Russian Pancakes (Blinna) from Scratch

You’re going to love this recipe for super thin yeast pancakes. Perfect for breakfast, lunch, or dinner. Leave plenty of time for the dough to rise.

What You Need

1 cake yeast

1/4 cup warm water

4 cups flour

3 cups warm water

2 beaten eggs

1/3 cup sugar

1 tsp. salt

1 tsp. baking powder

What You Do

Dissolve yeast in 1/4 cup warm water. Add flour and 3 cups of warm water to make a sponge.

Let the sponge stand for at least 4 hours or overnight.

Add the remaining ingredients and mix. If the mixture is too thick, add warm milk to thin.

Brush a griddle or cast iron pan with butter, and heat until a droplet of water dances and sizzles on the surface. Pour a small circle of batter onto the hot pan. Cook until tiny bubbles form near the edge. Flip and bake the other side. Stack on a warm plate and keep warm in the oven or serve right away with butter, syrup, or jam.
